Blend of oat, chia and almond butter with a hint of sweetness!

Instructions

ingredients

  • 1 cup raisins 
  • 2 cups rolled oats 
  • 1/2 cup unsweetened shredded coconut 
  • 1 tbsp. ground Chia seeds (use coffee grinder to grind or crush with the bottom of drinking glass or pestle)
  • 1 tbsp. whole Chia seeds
  • 1 tsp. cinnamon 
  • 2 tbsps. raw almond butter
  • 3/4 cup unsweetened applesauce 
  • 1 tsp. vanilla extract 

Prep

  1. Preheat oven at 300F. Soak 1/2 of your raisins in 1/2 cup warm water and let set for about 15 minutes. 
  2. In a large bowl, combine the oats, coconut, remaining raisins, all Chia seeds and cinnamon
  3. Place the almond butter, soaked raisins and the soaking water, applesauce, and vanilla in a blender or food processor. Blend until smooth. 
  4. Add almond butter mixture to dry ingredients and mix well. 
  5. Line a sheet pan with parchment paper. Scoop the cookies into 1.3 oz portions)and put on parchment about 2 inches apart. Press down slightly with a spoon or bottom of a drinking glass. Bake for 12 minutes. 
  6. At 12 minutes, check for doneness. Let cool and enjoy!
