Instructions

ingredients

  • 12 oz. broccoli slaw packaged
  • 2 oz. red cabbage finely shredded
  • 2 oz. cilantro chopped
  • 2 oz. corn canned or frozen
  • 1/3 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp vegan mayonnaise
  • 1/4 tsp lemon pepper
  • 1 1/2 tbsp agave syrup

Prep

  1. Shave the red cabbage with a mandoline or thinly slice. Soak in cold water to bleed out the color. Let soak for about 20 minutes, then drain.
  2. Wash and chop the cilantro.
  3. Drain the corn kernels or defrost if using frozen, then drain.
  4. In a separate bowl, whisk olive oil, apple cider vinegar, agave, and mayonnaise together. Set aside.
  5. In a larger bowl, place slaw mix and veggies. Toss well.
  6. Give your dressing another quick whisk then add a small amount to the slaw mix as you toss it.
  7. Add in small increments. You just want to lightly coat the slaw mix. You don't have to use all of the dressing.

notes

Tips from the Chef: Slaw mix from Trader Joes is great. Make sure you use a plant based mayo, like avocado mayo. Taste your dressing and adjust seasoning before you add to slaw.
